I did a lot of very tedious microscopy work during my 23 years as a medical research technician. One must exercise great care not to introduce air bubbles under the cover slip, so I used a mounting gel at all edges and used a micro-pipette to remove any bubbles while preparing slides. It's my belief that the spherical structures seen in the second video are a collection of very tiny air bubbles which will cause movement if they merge with or separate from adjacent bubbles or if they move into view from beneath other bubbles. Fluid pressure dynamics can account for this as well as for the movement of the formalinized red blood cells. If your microscope stage is not perfectly still and level (I had access to a special table which kept my scope level and vibration-free using an air cushion of nitrogen gas) and your cover slip is not sealed at all edges, then there can be slight downhill movement seen, particularly at the magnification levels which you're using. Temperature fluctuations and evaporative loss from unsealed samples over time can also create movement of RBC's and air bubbles within the surrounding fluids. So, my personal opinion is that there's insufficient evidence from these few videos to conclude that there's self-assembly of anything taking place within this embalmed material. I could be wrong, but I'd need to repeat the work myself to be more certain. Unfortunately, I've been retired for 14 years and no longer have access to the proper equipment and resources.
On the other hand, I've never seen anything like what you've captured in the 4000X "butterfly" video. There's clearly something bizarre going on within those two structures which I can't explain from an air bubble behavior or hydrodynamic perspective. It doesn't remind me of simple Brownian movement and the distinct colors presented are quite baffling as well. I'd be cautious about calling this "light emission", though, without first viewing by dark-adjusted eyes in a perfectly light-free room.
